Each variety contributes 1/3 to the wine. Agiorgitiko matures in acacia barrels, Syrah matures on its lees in a stainless tank and Mavrofilero in ceramic amphorae along with its skin for 4 months.
Veil. A detail gave the wine its name. The skins of Mavrofileros, in order to be immersed in the amphoras and checked, are inside a fabric (tulpani-veil) with the help of which we press the mass at the end by hand in order to get the young wine.
All the vineyards are located at an altitude of over 600m.
