ESTATE OF GEROVASILIOU SAUVIGNON BLANC (2021) 750ml
It comes from the Sauvignon Blanc variety, which is grown in a small part of the Estate's vineyard. After pre-fermentation cryo-extraction, it is fermented at around 20 °C in French oak barrels, where it remains for a few months with its lees.
It has a bright golden yellow color and a bouquet with character of summer and exotic fruits (melon, pear, mango, pineapple) against a background of smoky vanilla and aromatic herbs. It is full-bodied, balanced and well-structured, as it has gained from its contact with wood. It is a wine with the potential to evolve.
Enjoy chilled at 10–12 °C.
Shellfish, fish with a fairly fatty structure, tongue fried in flavored butter, poultry or pork with white sauces, smoked cheeses.
